Bacon, Egg & Tomato Salad Sandwiches

Yield: 2 Servings
| 5 egg -- hard boiled |
1/4 Cup mayonnaise |
| 5 Slice bacon -- cooked and |
1 Tbl creole Mustard |
| -crumbled |
salt and pepper |
| 1 tomato -- seeded and chopped |
hot sauce -- to taste |
| 1 green onion -- chopped |
8 Slice whole wheat bread |
1. Hard boil eggs. 2. Cook, drain and crumble bacon 3. Place eggs in mxing bowl, break up with a fork. Add remaining ingredients and mix well. 4. Season to taste with salt, pepper and hot sauce 5. Refrigerate to allow flavours to blend.
